与牛乳酸奶相比,母羊乳酸奶含有更丰富的蛋白质、矿物质和中短链脂肪酸。本研究旨在评估母羊乳酸奶(CW,3.0%脂肪)、半脱脂(ES,2.8%脂肪)和全牛乳酸奶(EW,5.8%脂肪)对边缘高血浆胆固醇受试者的炎症标志物和肠道微生物群的影响。

纳入30名成人(16名女性),在三个5周期间(4周冲淡期)食用250克/酸奶/天。分析了血浆胰岛素、瘦素、粘附分子、细胞因子和肠道微生物群组成(qPCR)。使用变化率评估整个组和具有不同胆固醇/HDL-c比率的受试者亚组(Cho-I组A:前6名女性和4名男性值;Cho-I组B:其余受试者)的治疗效果。

结果显示,酸奶对整个组的炎症生物标志物或微生物群没有不同的影响。然而,与CW和ES相比,Cho-I组A的受试者在EW后ICAM-1和P-选择素的变化率较低(P=0.047和P=0.020)。与ES和CW相比,该组女性在EW后的MCP-1变化率较低(P = 0.028,均为)。EW vs. ES期间,Cho-I组A组妇女的球状芽孢杆菌减少(P = 0.028)。

综上所述,该研究结果表明,母牛酸奶和母羊乳酸奶对炎症标志物和微生物群的影响无差异,但在TC/HDL-c最高的受试者中,母羊乳酸奶对一些炎症生物标志物的降低作用得进一步研究。
