有学者认为，倾向选择低营养的快餐食物可能与缺乏教育和贫困有关。

美国人正在变得越来越胖，这已是不争的事实。高肥胖率还会带来严重的并发症和昂贵的医疗费用，但什么是导致肥胖率激增的原因始终是争论的焦点。争论的原因是：体重增加是由于能量的摄入大于能量支出导致的能量盈余引发的，而多种情况都有可能导致总能量的盈余。有些研究将能量盈余主要归咎于体能活动的减少一些研究将其归咎于能量摄入的增加。而"饮食环境"的改变，例如容易获得的低价、高热量、低营养的快餐，通常被认为是导致能量摄入增加的重要因素之一。另有学者认为，倾向选择低营养的快餐食物可能与缺乏教育和贫困有关。为确切地了解饮食环境是否以及如何影响体重，中国科学院遗传与发育生物学研究所John Speakman研究组分析了全美肥胖发生率与快餐店和全服务式餐馆分布密度之间的关系，结果表明二者之间缺乏关联。该结果发表在2017年8月的《美国临床营养学杂志》上。研究人员假设，餐馆密度即使只是与肥胖率部分相关，则可以预测，快餐店分布密度高的地区（按当地人口计算）居民的肥胖率就高。此外，如果贫穷和教育程度低与肥胖率有关，则可以预测，如果用贫穷人口比例和平均受教育程度两个变量进行校正之后，快餐店分布密度与肥胖率之间的相关性就

瑞典学者在BMJ上发表的研究提示，体重指数（BMI）越高的孕妇的子女患先天性畸形的风险越高。 研究纳入120万名在2001年~2014年出生的婴儿。其中有4.4万名婴儿患有先天性畸形，其中以先天性心脏病最为常见，约占50%。
